Osso Buco in Denmark

I am currently visiting my mom in Denmark.

Apparently Denmark saved the winter for my visit, so one day it is snowing and the next raining. It is cold as f… but look how beautiful the snow is <3

I was so lucky my mom had some Kobe Osso Buco’s in the freezer for me to make us. The perfect dish for the cold weather.

It turned out amazing, so here is the recipe for an easy but delicious dish.

Osso Buco with cauliflower mash

Ingredients for Osso Buco:
  • 2 pieces of Osso Buco
  • 1 big onion
  • 3 cloves of garlic
  • 3 carrots
  • 3 parsnips
  • 1 bell pepper
  • 1 handful of fresh thyme
  • 0.5 liter of broth
  • 1 small can of tomato paste
  • 1.5 dark beer
  • 4 tbsp of flour
  • Salt and pepper
  • 1 tsp of cornstarch
  1. Mix the flour with salt and pepper
  2. Pad the Osso Buco in the flour mix, so they are lightly covered
  3. Brown the Osso Buco in a little butter on a hot skillet
    1. It is important to make sure the flour is thoroughly browned, so make sure the skillet is hot
  4. Put the browned Osso Buco in a Dutch Oven
  5. Now use the pan to saute your finely minced garlic and onions
  6. Add the rest of the vegetables to the onions, finely sliced
  7. Add the tomato paste, when this is divided to all the vegetables add the mix to the Dutch Oven
  8. Put the beer in the pan, when it boils add to the Dutch Oven
  9. Add the broth and thyme
  10. Now let it simmer with the lit on for 3-4 hours
  11. Stir once in a while
  12. After the 3-4 hours add salt and pepper to your liking
  13. If needed add the cornstarch to thicken the sauce
    1. Add the cornstarch to a little water, make sure it is completely dissolved before adding it to the sauce

 

Ingredients for cauliflower mash:
  • 1 head of cauliflower
  • 3 Parsnips
  • 4 potatoes
  • 3 tbsp of butter
  • salt and pepper
  1. Clean the veggies
  2. Divide the cauliflower into bouquets
  3. Slice the Parsnips and potatoes thin
  4. Add all the veggies to a pot, cover with water
  5. Boil for approximately 25 min
  6. Poor the water from the veggies (save it till you are done)
  7. Whisk the veggies together with the butter
  8. If it is a little dry, add some of the water used to boil in
  9. Taste the mash, add salt and pepper for your taste

 

Serve the Osso Boco with the mash
